Heading to a Holiday Party and Need a Unique Dish?

Try this:

Green Apple & Peanut Butter Enchiladas

courtesy: Brent Dampier

2 - 8 oz. cans of crescent rolls
2 sticks butter
4 green apples, peeled, seeded, and sliced
1 cup sugar
1 teaspoon cinnamon
½ cup peanut butter
12 ounces Mountain Dew

Preheat oven to 350° F. Melt butter over medium-low heat in medium saucepan. Add sugar and cinnamon and blend well. Unroll crescent rolls and place a generous dab of peanut butter topped with green apple slice(s) on each. Roll from large end to small end. Place in 13”x 9” baking dish. Pour butter mixture over each, and then pour the Mountain Dew over the top of dish. Bake at 350° F for 45 minutes or until golden brown.

Makes 6-8 servings

Cook’s Notes: For softer more savory apples, add apple slices to the butter mixture and simmer while preparing crescent rolls. Remove apples making sure to return as much butter mixture to the saucepan as possible.

Brent is so thoughtful to share his one-of-a-kind recipes with Blonde Appetit! He vouches for this recipe and even states that it receives rave reviews even when...I quote, "he is not behind the wheel."

Can you think of a creative title for this recipe? Brent is working on his own cookbook and may enter this recipe in a famous contest. Your name could go down in history. Blonde Appetit has her thinking cap on!!!!!!!!
