Get Out and Vote!


The Seventies brought about Moi and a yummy peanut butter pie!

Jimmy Carter's Peanut Butter Pie
6 ounces cream cheese
3/4 cup confectioners’ sugar
1/2 cup peanut butter
2 tablespoons milk
1 (8 ounce) carton Cool Whip
1 baked graham cracker crust

Beat cream cheese and sugar together. Add peanut butter and milk. Fold in Cool Whip. Pour into baked graham cracker crust and chill for several hours. Serve with additional whipped topping, it desired
P.S. I just thought the pic was funny! So...here is a recipe for boiled peanuts.
Boiled Peanuts

Ingredients
2 to 3 pounds fresh green peanuts
1 1/2 cups salt
Directions
Put the peanuts and the salt in a large stockpot. Cover completely with water. Bring to a boil and simmer for at least 1 hour and up to 3 hours. To check whether they are done, pull 1 or 2 peanuts out of the pot and crack them open. When they are soft, they are done. If they are still slightly crunchy, they are not done yet, If they are not salty enough, leave them in the salted water and turn off the heat. When they are done, drain and serve immediately.
Hint on the salt - add slowly and use green peanuts, or just salt too taste. It is also yummy to add jalapenos or a creole type seasoning. Again, just watch the salt content. You may choose to cut the salt down by half.

My aunt swears by laving the peanuts to soak overnight...and hers are really good. I also recommend pouring beer into the water. Real beer, like Budweiser.

OMG: I will keep that in mind. St. Patty's Day Birthday, it will soak up all that booze!
